Very Berry Panna Cotta Recipe

Very Berry Panna Cotta is made with layers of vanilla panna cotta and berry layers. The mellow flavor of vanilla is very nicely balanced with the sweet and tart berries.

This is a signature dessert of my sister’s. Whenever we get together and we’re doing a potluck dinner, I know that my sister will bring either, Panna Cotta, cheesecake or a berry jell-o.

She gave me the recipe for the panna cotta and I added the idea of berries, hence the Very Berry Panna Cotta). I think they served their purpose extremely well.

 

Very Berry Panna Cotta

Ingredients for Very Berry Panna Cotta

Panna Cotta Layer:

  • milk
  • heavy cream
  • sugar
  • gelatin

Berry Layer:

  • raspberry
  • strawberry
  • sugar
  • water
  • gelatin

How to make Very Berry Panna Cotta:

Make the Panna Cotta mixture

  1. Sprinkle the gelatin over cold milk, mix and put it aside.
  2. Bring the heavy cream to boil, add sugar and mix until sugar dissolves.
  3. Pour the milk with gelatin into the heavy cream and mix with a spoon until gelatin is dissolved. If the gelatin does not dissolve, then put the saucepan back on the stove and heat over very low heat until gelatin dissolves. DO NOT bring it to boil.
  4. Take the saucepan off the stove and place over an ice cold bath and stir from time to time until cool, but not cold.

Make the berry sauce –

  1. Put the thoroughly washed berries in a different saucepan, add sugar and water. Bring to boil and cook over medium heat for 2-3 minutes.
  2. Take it off the stove, pulse with a hand blender a couple of times, to get rid of any chunks of berries that are left. Put the puree through a sieve to get rid of any of seeds.
  3. From this amount of ingredients I got about 2 cups of berry puree. Take away 1/2 cups of pure and heat it either in the microwave or in a different saucepan, DO NOT bring it to boil. Add 1 1/2 teaspoons of gelatin and mix with a spoon or a whisk until gelatin dissolves. Add this to the rest of the puree and mix thoroughly. Put the saucepan with the puree over warm bath, to keep it from setting.

Prep to Assemble

  1. By now the panna cotta mixture should be at room temperature.
  2. Prepare the containers in which you plan to make panna cotta. If you want to get the “angled” look (as seen in the 2nd picture) then you need to place the glasses in another container large enough to fit them and secure them at an angle. Place the container with the empty glasses or in the fridge so that you’re able to pour the panna cotta mixture right in there.

Pour

  1. It’s easier to pour from a pitcher, so use one if you have it.Pour the panna cotta mixture in the glasses, making them 1/3 full. Return the pitcher to a warm water bath, to keep it from setting right in the pitcher.
  2. Once the first layer sets, pour the berry puree into the glasses, making the glass 2/3 full and leave in the fridge. Return the pitcher to the warm water bath.
  3. Once the second layer sets, pour in the remainder of the panna cotta mixture on top, making the glasses full.
  4. Leave the panna cotta in the refrigerator to completely set.
