Cucumber Dill Salad with Creamy Dressing

This Refreshing Cucumber Dill Salad salad literally takes a couple of minutes to make. All you need to do is chop up your cucumbers, dill and chives or scallions, then add your dressing and you’re done! If you haven’t tried this before, you should try it, it’s absolutely delicious!

With warm weather, we all try to stay away from the stove, so salads come to the rescue more often than other times of the year. This salad of cucumbers, dill & creamy sour cream dressing is something that our family eats all the time, regardless of seasons, but even more so now. As a kid when I visited my grandma in the summer, she would go to her garden behind her house, pick some fresh prickly cucumbers, dill, scallions and make this salad. After the salad was eaten, I would take a piece of bread and dunk it in the leftover dressing that was on the bottom of the bowl, oh the memories!

Ingredients for Refreshing Cucumber Dill Salad with Creamy Dressing:

  • cucumbers, chopped
  • chopped scallions/onions/chives
  • dill, chopped
  • mayonnaise
  • low-fat sour cream or Greek yogurt
  • Salt, to taste

How to make Refreshing Cucumber Dill Salad with Creamy Dressing:

Combine dressing ingredients in a bowl and season with salt. Add to the cucumbers & dill, stir to combine. Sprinkle with chopped scallions/chives/onions and stir again. Serve.

  • 2 cups cucumbers chopped
  • ¼ – ⅓ cups chopped scallions/onions/chives
