Raspberry Refrigerator Jam

Hello, hello! How’s your summer going? Enjoying the warm weather & the sun yet?
For us, coming of summer means that it’s time to make some beautiful raspberry refrigerator jam. You might not know, but this Raspberry Jam is good on practically anything – crepes, pancakes, Greek yogurt, cottage cheese, French toast, parfait, raspberry lemonade and I bet you can come up with other things! Not only does it have the flavor of the fresh raspberries, but it also retains more of the vitamins than the cooked jam.

Back in the day when medicine wasn’t so popular, people used raspberries or Refrigerator Raspberry Jam to bring down fever. Since the medicinal properties are only in the fresh raspberries, and in the winter time there was no fresh raspberries, preserving them with sugar was the only way to go.  I still add couple teaspoons of this raspberry jam to tea whenever my kids or I have a fever, well…or not. It’s so good that it’s hard to imagine that you would wait until you’re sick to make tea with it.
Adding enough sugar to the raspberries, keeps them good for pretty much a year, I still have a jar or two left from last summer.

I have always made my Raspberry Jam with 1:1 ratio of sugar to raspberries (by weight). This way they can keep in the fridge and not spoil. It tastes great and is awesome as topping for so many things. But, this year I wanted to make it less sweet, so that I can eat it by itself, you know, with some sour cream? So I added just enough sugar to make it sweet but not too sweet and then I froze it in 2 cup plastic containers.

So the pictures that are in the step by step instructions show the consistency of the less sweet version. The pictures before and after the instructions, are those of the refrigerator type jam (1:1 sugar to raspberry ratio). It’s up to you which version you prefer and which part of the fridge you have more space in, but either way you should make some of this goodness this summer, while the berries are in season! Try to get the fresh picked or farm strawberries, they tend to be softer and sweeter than the ones you get at the grocery store. You’ll save some money doing so too!

Raspberry Refrigerator Jam

Ingredients:

  • raspberry
  • sugar

Equipment:

  • Clean & Dry Jars/plastic containers for storage with lids
  • Potato Masher or Mixer with Beater Blades

Instructions:

Place raspberries in a large enough pot to fit the raspberries & sugar. Mash with potato masher completely breaking up the raspberries and letting all the juices to be released. Add the sugar in 1:1 ratio to raspberries, and stir until completely dissolved. Alternatively, you can use mixer with beater blades to do the same thing. *Make sure all equipment is dry. Do not double dip, when trying to taste the jam. Use a different dry spoon if you want to taste it again.*
If making freezer jam, you can make it more chunky and add only enough sugar to make it sweet to your taste. The pictures in the instructions show the chunkiness of freezer jam. How to make homemade raspberry jam in a pot with fresh raspberries and sugar.

    Hi,
    Do you wash your raspberries? If so, how do you manage to dry them enough for this recipe? As far as I understand, moisture can act as a spoiling agent here.

    • Hi Olga, very good question. I was taught to never wash raspberries when you make them with sugar like this, for this exact reason – if the water gets anywhere around the jars, spoons or even the pot the jam might go bad.

    • Thank you Ksenia! I go by taste. If working with 3 lbs, start with about 1.5-2 cups and then taste it. add more if you want it more sweet.
