Cheesy Chicken & Rice One Pot Dinner {in 30 Minutes or less)

Lost somewhere between a risotto and a pilaf this quick dinner idea is always a hit. Your man will like it since it has meat in it, kids will like it because it’s cheesy, and you will love it because its quick, easy, delicious and leaves almost no dirty dishes behind. Weeknight dinners have to be fuss free and this one is just that.

Cheesy Chicken & Rice One Pan Dinner

Yield: 2-4 portions

Ingredients:

  • chicken breast, cubed to 1-inch pieces
  • rice, rinsed under running water until the water runs clear
  • onion, diced
  • carrot, shredded
  • cloves garlic, minced or pressed
  • Olive Oil
  • unsalted butter

Stir together and add:

Add at the end:

  • shredded cheese (Mozzarella, Gouda, Cheddar  or a combination of them. Any other good melting cheese you like will work as well)
  • salt
  • freshly ground pepper
  • chopped parsley and/or chives

How to Make Creamy Chicken Rice One Pan Dinner:

  1. Heat couple tablespoons of olive oil in a non stick pan over high heat and brown the chicken pieces on all sides. Add the butter, onions, carrots and cook stirring often until the onion is translucent. Reduce heat to low-meadium and add the rice, minced garlic and stir.
  2. Combine the chicken broth or combination of hot water and the chicken bullion base with heavy cream and salt. Stir until dissolved.
  3. Pour the mixture over rice, cover with lid and cook for about 15 minutes or until the rice is cooked through.
  4. Remove from heat and stir in grated cheese, freshly ground pepper and chopped parsley and/or chives. Taste and adjust the amount of seasoning. Serve hot right away.

  • 1 tsp freshly ground pepper
  • 2-3 Tbsp chopped parsley and/or chives

  3. Pour the mixture over rice, cover with lid and cook for about 15 minutes or until the rice is cooked through.
  4. Remove from heat and stir in 1/2-1 cup grated cheese, 1 tsp freshly ground pepper and 2-3 tbsp chopped parsley and/or chives. Taste and adjust the amount of seasoning. Serve hot right away.
