Parmesan Crusted Salmon Casserole

Today I am not going to say much about this dish. Ooey-gooey cheese lovingly wrapping each piece of salmon, topped with a crispity-crisp crust shown on the picture says everything you need to know about this Cheesy Parmesan Crusted Salmon Bake. I will just say that it’s incredibly delicious and is usually devoured with minutes.

It’s also great for parties, since you can prep this Salmon Bake before hand and just pop it in the oven for 15 minutes right before you’re ready to serve it. I probably wouldn’t put the Parmesan Panco topping on top until you’re ready to bake it, just to make sure that it comes out crispy, but you can definitely pre-mix everything for the topping ahead of time.

Parmesan Crusted Salmon Casserole

Servings:  2 – 4

Ingredients:

  • salmon fillet
  • grated cheese (mozzarella, Mexican, cheddar, gouda etc)
  • garlic, peeled & pressed
  • mayonnaise
  • mustard powder
  • paprika
  • freshly ground black pepper
  • salt
  • Small bunch of flat leaf Italian parsley

Parmesan Crust:

  • Panko Crumbs
  • parmesan cheese, grated
  • melted butter, unsalted

Make the Parmesan Panco Crust:

Combine the Panco crumbs, grated parmesan cheese and butter together in a bowl. Stir until the butter coats the crumbs evenly. Set aside.

Chop the parsley:

Thoroughly wash the parsley under running water and use paper towel to dry the leaves. Cut off the stems, then finely chop the leaves. Set aside.

Rinse Salmon fillet under running water and pat dry with a paper towel. Cut into 1 inch cubes.

Stir the spices together.

Preparing the salmon and seasoning for this Cheesy Parmesan Crusted Salmon Bake recipe.

Add spices, parsley, pressed garlic, mayonnaise, and 1/2 the cheese to the salmon cubes. Stir to distribute the ingredients evenly.

Preheat oven to 425F with the baking rack in the middle.

Transfer the mixture to a ovenproof baking dish (I used a 9’’x6’’) and flatten the salmon mixture. Sprinkle the top evenly with cheese, then breadcrumb mixture.

Step by step on how to top the casserole dish with the Parmesan crust.

Allow to bake for 5-7 minutes uncovered, then once the breadcrumbs are golden in  color loosely cover with foil and bake for another 9-10 minutes or until the salmon is baked through in the middle of the dish. Remove from the oven and serve with steamed vegetables or a side dish of choice.

Ingredients

  • 1 lb salmon fillet

Parmesan Crust

  • 1/2 Cup Panko Crumbs

    I just made this recipe, I followed the directions exactly. When I just pulled it from the oven it was raw 🙁 put it in for another 10 min. Hopefully it’ll be done, it looks and smells delicious.

      I think it would work just as well with other fish, since I roast tilapia and swai the same way all the time (salt, pepper, garlic powder + olive oil/butter, lemon).
