Growing up in Ukraine, my grandma had a garden behind her house, so when we visited her she fed us homegrown, organic fruits and vegetables. I definitely miss being able to pick an apple or a pear right off the tree and eat it just like that – not having to worry about pesticides or other things that the food might’ve been sprayed with.

One of the most most comforting meals that I remember my grandma make was green beans with sour cream sauce, garlic and caramelized onions. She served them with mamaliga (which is a bit thicker version of the Italian polenta) topped with caramelized onion, sour cream, feta cheese and a soft boiled egg on the side. This meal is traditional to the western part of Ukraine where I grew up and every time I make it, it brings some of the fondest memories of my childhood.

Back in Ukraine the sour cream was not as sour as it is here in US, it tasted more like the creme fraiche because it was made with straight up cream that was slightly cultured until it was thick. So to recreate the flavor that I am used to, I used heavy cream, then I added the parmesan cheese to thicken the sauce which put a contemporary flare on an old favorite. Simmering the green beans in the cream until it thickens, allows the flavors of the cream and garlic go all the way inside the bean, at the same time getting rid of that often time hated flavor of the steamed green bean.

Fill a large pot with water. Add the beans and bring to boil over high heat. Cook for about 10 minutes or until the beans are almost cooked through over medium heat. Remove the beans to an iced water to stop the cooking process, then drain about 5 minutes later. Do not leave the beans in the water for longer, otherwise they will absorb too much water and taste watery.

Add garlic and grated parmesan. Stir & cook for additional 2-3 minutes.Add salt & black pepper. Stir. Taste and adjust the seasoning.
