Growing up in Ukraine, my grandma had a garden behind her house, so when we visited her, she fed us homegrown, organic fruits and vegetables. One of the most comforting meals that I remember my grandma making was green beans with sour cream sauce, garlic, and caramelized onions.

Green Beans with Garlic Parmesan!

Back in Ukraine, the sour cream was not as sour as it is here in the US, it tasted more like the crème fraîche because it’s made with straight-up cream that was slightly cultured until thickened.

So, to recreate the flavor of the Green Beans Recipe that I am used to, I used heavy cream, then I added the parmesan cheese to thicken the sauce which put a contemporary flare on an old favorite. Simmering the Green Beans in the cream, allows the flavors of the cream and garlic to go all the way inside the bean, at the same time getting rid of that often time hated flavor of the steamed green bean.

Creamy Garlic Parmesan Green Beans

Ingredients:

  • 2 qt container filled with trimmed beans, cut in half
  • 1 large onion, diced
  • 1 cup whipping cream (full fat cream)
  • 2-3 cloves fresh garlic
  • 1/2 – 1 tsp salt
  • 1 tsp black ground pepper
  • 1/2 – 1 cup grated parmesan cheese (add less at first, then add more as the flavor requires)

How to Cook Green Beans Recipe:

  • Peel and dice the onion
  • Wash the beans, trim the ends of the beans. Then cut the beans in half.

  • Fill a large pot with water. Add beans and bring to a boil. Cook beans for about 10 minutes or until they are cooked through.
  • Drain the beans and rinse with cold water.

  • Add oil to a frying pan. When hot, add diced onions. Cook the onions until golden.
  • Add the green beans and heavy cream. Cook for about 10 minutes, or until the cream thickens. Add garlic and grated parmesan. Season with salt and pepper.

  • Taste and adjust the seasoning. Transfer to a serving bowl and serve right away, topping with parmesan.

Ingredients

  • 2 qt container filled with trimmed beans cut in half

Instructions

  1. Start by prepping the vegetables. Peel and dice the onion.
  2. Wash the beans thoroughly in water. Trim the ends of the beans by lining them up and cutting off both ends. Then cut the beans in half.
  3. Fill a large pot with water. Add the beans and bring to boil over high heat. Cook for about 10 minutes or until the beans are almost cooked through over medium heat. Remove the beans to an iced water to stop the cooking process, then drain about 5 minutes later. Do not leave the beans in the water for longer, otherwise, they will absorb too much water and taste watery.
  4. Add couple tablespoons of oil to a frying pan. Heat through and add diced onions. Cook the onion over medium heat until golden in color, stirring often.
  5. Add green beans and heavy cream. Cook the green beans in the heavy cream for about 10 minutes over medium heat or until the cream is reduced and thickened, stirring from time to time. Add garlic and grated Parmesan. Stir & cook for additional 2-3 minutes. Add salt & black pepper. Stir. Taste and adjust the seasoning. Keep in mind that Parmesan cheese is very salty, so if you, to add more Parmesan before serving, you will need to under season at this point.

  6. Transfer to a serving bowl and serve right away, sprinkling a little more grated Parmesan on top. Stir once more to incorporate the cheese.

    I made green beans recently but I bought whole frozen ones(they were pretty and yummy) and broiled in oven with onion and red bellpeppers along with garlic and black pepper salt some olive oil. Yummy
