Several years ago my aunt (thank you Irina!) brought this eggplant dish to a party and it was one of the most popular dishes at the table. Everyone was asking for the recipe, including me. I’m used to using regular eggplants, so I was really curious how she got rid of the bitterness that eggplants tend to have.

It appears that when you use the long skinny eggplants or Chinese eggplants, they don’t have the same bitterness that regular eggplants have, which is great news because it makes this Sweet and Sour Garlicy Chinese Eggplant dish possible. If you’re a fan of eggplant you’re really going to enjoy this appetizer, just like I did! So here you go, enjoy!

Sweet and Sour Garlicky Chinese Eggplant

Ingredients:

  • 3 Chinese eggplants, stems removed, cut into 3 inch sections, then cut int 1/2 inch sticks
  • 1 cup Sweet and Sour Chili Sauce 
  • 1/2 cup chopped parsley
  • 4 cloves garlic, pressed
  • All purpose flour
  • Oil for frying
  • Salt to taste

How to make Sweet and Sour Garlicky Chinese Eggplant

Combine the sweet and sour sauce with garlic and parsley. Set aside.
Line a flat dish with paper towels to transfer the fried eggplant to.
Dredge pieces of eggplant in flour and fry on all sides in batches, in a hot skillet, until slightly browned. Transfer to a paper towel lined plate.
Once done, place one layer of eggplants into a glass container, sprinkle with salt, drizzle with the sauce, sprinkle with the parsley, then keep repeating the layers until all eggplant, sauce and parsley are used up.
Leave in the fridge for a couple of hours or overnight for the flavors to mend.
To serve: transfer to a serving plate and sprinkle with parsley and pomegranate seeds as garnish.
