Hiya guys! How’s it been? I’m knee-deep in books, studies, and still trying to figure out how to have it all, school, family, cooking and sanity. The last one I’ve struggled the most with. As much as I hate running to food for comfort, it’s just so easy to do with this Cheesy Bacon Wrapped Chicken.

Ingredients for Cheesy Bacon Wrapped Chicken:
Yields: 6 servings

  • chicken breast
  • smoked bacon
  • mozzarella cheese, shredded
  • parmesan cheese, shredded
  • cloves garlic, pressed
  • heavy cream
  • salt
  • smoked paprika
  • black ground pepper
  • oil
  • chopped parsley or basil (for garnish)

How to make Cheesy Bacon Wrapped Chicken 

  • Cut the chicken breast into bite-size cubes. Cut the bacon slices into three shorter strips.

  • In a bowl combine the chicken breast, minced garlic, paprika, salt, pepper, and oil.

  1. Cut each chicken breast in two pieces, lengthwise, then cut in the opposite direction until you have about 1 1/2 inch pieces. Cut 12 slices of bacon in 3 shorter strips.
  2. Combine the chicken breast with 3 cloves of pressed garlic, 1 tsp paprika, teaspoons salt, 1 teaspoon of ground black pepper and 1 tablespoon oil. Mix together until the chicken breasts are evenly coated.

  3. Wrap each chicken piece with 1 piece of bacon and secure with a toothpick. Place into the 9x9 baking dish or 10-inch oval baking dish. Do the same with the rest of the pieces.

  4. Bake at 420F for 15 minutes, then lower the temperature to 350 and bake for another 35 minutes. Now wiggle each piece out, as to unstick them from each other, to make it easier to serve later. If there's a lot of liquid left around the chicken, remove it by draining it or by pumping it out with the baster. Pour the cream over the chicken and bake for about 15 minutes. Once the chicken is soft and tender, sprinkle with cheese and bake for another 5 minutes.

  5. Sprinkle with chopped herbs for garnish.

      You can use any size of a chicken breast, that you then cut into smaller pieces and wrap in bacon.

    I just have a question I was appreciate it if you answer me. I wanna make those waffles with cooked constant milk about the filling how many butter is that in cups you said three sticks?

    • Hi Anita, sorry it took me a while to realize which recipe you were talking about since the question wasn’t posted directly under the recipe))
      1 stick butter is 1/2 cup, so 3 sticks would make it 1 1/2 cups.

    These are so amazing! I added some chicken seasoning to mine
    Do you think it would work to marinate them night before, wrap in bacon, and refrigerate? Then bake next day?

      I’m not sure the potatoes will absorb much flavor overnight, being as dense as they are. Plus, they will probably brown a little bit, making them not very good looking. As far as I know, the potatoes shouldn’t be refrigerated raw, since they acquire some kind of toxic substance, so I wouldn’t do it for that reason as well.
