Ingredients

  • 6 hard boiled eggs or 12 quail eggs
  • 1 cup chopped parsley
  • 1 head of garlic, peeled, chopped
  • 4 Tbsp tomato paste
  • 6 anchovy fillets, chopped
  • 500 ml Olive Oil
  • 2 Tbsp vinegar
  • 2 Tbsp sweet chili sauce
  • 1 Chili pepper, seeds removed
  • ½ tsp sugar

Instructions

  1. Add chopped parsley, garlic and anchovies to a container, add tomato paste, olive oil and whisk together.
  2. Add eggs to a ceramic or glass container, pour the marinade over, close the container and place in the fridge overnight.
  3. Serve eggs, pouring the marinade over with a crusty baguette.
