Piedmont Eggs
It’s all about the marinade in this recipe. The Marinated Piedmont Eggs are to be served by slicing the egg and topping it with the most delicious marinade, made with lots of garlic, fresh parsley, sweet chili sauce mixed with the oil. Paired with a good crusty baguette or ciabatta, it’s the most satisfying combination!
I’m sure you’ve never had anything like this, but once you try it, you’ll be wondering where this has been all your life!
Marinated Piedmont Eggs
Ingredients for Marinated Piedmont Eggs:
- hard boiled eggs or quail eggs
- chopped parsley
- garlic, peeled, chopped
- tomato paste
- anchovy fillets, chopped
- Olive Oil
- vinegar
- sweet chili sauce
- Chili pepper, seeds removed
- sugar
How to make Piedmont Eggs:
Add chopped parsley, garlic and anchovies to a container, add tomato paste, olive oil and whisk together.
Add eggs to a ceramic or glass container, pour the marinade over, close the container and place in the fridge overnight.
Serve eggs, pouring the marinade over with a crusty baguette.

Ingredients
- 6 hard boiled eggs or 12 quail eggs
- 1 cup chopped parsley
- 1 head of garlic peeled, chopped
- 4 Tbsp tomato paste
- 6 anchovy fillets chopped
- 500 ml Olive Oil
- 2 Tbsp vinegar
- 2 Tbsp sweet chili sauce
- 1 Chili pepper seeds removed
- 1/2 tsp sugar
