Bacon Wrapped Potatoes – Potato pieces, tossed in BBQ sauce and lovingly wrapped in smoked bacon, then roasted to crispy golden perfection.

When my husband and me just got married, we often times took random overnight trips to Seattle. It’s not too far from where we live (2.5 hour drive) and we liked to explore the city. The only thing that we booked was the hotel, everything else was just whatever we found as we wandered through the city. At the end of one of such trip we decided to go and have dinner at the Space Needle. For those that don’t know what the Space Needle is – it’s an observation tower in Seattle, sitting 605 feet off the ground. Aside from the observation deck they also have a restaurant that rotates 360 degrees every 47 minutes and sits 500 feet above ground. In the time that you’re having dinner your view constantly changes and you get to see the whole Seattle and bay area.

You’re probably asking yourselves why am I telling you about this and what it has to do with this Bacon Wrapped Potato appetizer. Well, my dinner that night consisted of steak & two half potatoes wrapped in bacon. Obviously I had to come home and recreate the potatoes and that is why you’re seeing this recipe now 🙂 It can be made as a side dish for a meaty entree or as a standalone appetizer that is sure to become an instant crowd pleaser. Oh and it’s super simple and easy to make 😉

Bacon Wrapped Potatoes


Ingredients:

  • potatoes, peeled & cut into quarters
  • smoked bacon, regular thickness
  • BBQ sauce
  • salt
  • garlic powder

Also (optional*)

  • Appetizer skewers or toothpicks
  • Ziplock bag

Peeled potatoes, bacon, BBQ sauce and toothpicks on a towel.

Toss potatoes with the BBQ sauce, garlic powder and salt together in a bowl or a ziplock bag until the potatoes are thoroughly coated.

Wrap each piece of potato with 1/2 strip of bacon, stretching it until the ends overlap. Secure the bacon with a toothpick  (if you don’t, the bacon might slip off the potato or unwrap)and lay it on a parchment or foil lined rimmed baking sheet bacon ends side down. Roast in the preheated to 375F oven for 45 minutes or until the potatoes are easily pierced with a fork and the bacon is nicely crisped up. Serve right away with a choice of BBQ sauce, mayo & ketchup mixed together (1:1 ratio), sour cream sprinkled with salt or as is.

    Sounds delish! Do you use russet potatoes? I’m partial to red or gold.

    • Yes, you can use any kind of potatoes for this recipe. I usually buy the yellow potatoes that’s why I said yellow in the recipe 🙂
