Over a week ago when we got together with Valentina, Natalya, Katya & Natasha at the beach for a little bloggers retreat, the first night that we got there I cooked dinner that consisted of this Oven Baked Salmon, Asparagus and mashed potatoes.

The girls and I enjoyed our dinner, and they asked that I post a recipe. Originally we planned to make Roasted Potatoes just like the ones I have in this post, but it was late, we were hungry and needed something quicker, so Roasted Potatoes was replaced with mashed potatoes.

Simple Oven Baked Salmon Recipe

What I enjoy about this one pan meal, is that it requires minimal prep, all is done pretty much in one pan and does not call for any fancy ingredients. I sprinkled the salmon with mustard powder, paprika and ginger powder, but if I don’t have those in my spice drawer, I’ll go with garlic powder, salt, and pepper. Baked Salmon is fantastic as is, so it doesn’t need much. Even salt, pepper, butter, and a lemon circle will do. It’s really up to you on how you want to prepare this Oven Baked Salmon Recipe.

What Salmon do I buy for this recipe?

Usually, I buy a large salmon fillet, cut it to portion size (4-6 oz), tightly wrap in plastic wrap and place in the freezer. We don’t have a large family, so we can never eat the whole fillet at once, portioning and freezing salmon works great because not only can we have salmon whenever we want, but then we save money by buying a larger fillet.

Potato, Salmon and Asparagus One Pan Dinner {Clean, Easy & Delicious}

Serves: 4

  • Little Potatoes or small Yellow Potatoes
  • salmon
  • asparagus
  • salt
  • ground mustard
  • paprika
  • ground ginger (*optional)
  • freshly ground black pepper
  • lemon slices (*optional)

Garlic Mixture

  • olive oil
  • Garlic

How to make Potato Salmon and Asparagus One Pan Dinner:

  • In a ziplock bag combine potatoes, salt, ground pepper, garlic, and oil. Toss until thoroughly coated. Line a baking sheet with foil. Place the potatoes cut side down.

How to season and roast the potatoes for this healthy one pan meal!

  • Bake on 450F, for about 20 minutes, and flip the potatoes cut side up. Bake for another 10 minutes or until potatoes are slightly soft.
  • Move the oven roasted potatoes to one corner of the baking pan, making space for salmon and asparagus.
  • Add the salmon to baking sheet, spacing them 1 inch apart. Sprinkle with salt. Brush the top of the salmon with oil and garlic. Sprinkle with ground mustard, paprika, and ground ginger.

  • In a bowl, toss the asparagus with salt, pepper, and the rest of the garlic and oil mixture. Place asparagus onto the baking sheet.
  • Bake at 450F for 12-15 minutes, depending on the thickness of the salmon.
  • Remove from the oven and serve as is on the baking sheet or transfer to a serving platter and serve hot.

Ingredients

  • 2 lb Little Potatoes or small Yellow Potatoes thoroughly scrubbed and quartered I had combination of both
  • 1.5 lb salmon cut into 4 portions
  • 1 lb asparagus
  • 2-3 tsp salt
  • 2 tsp ground mustard
  • 1 tsp paprika
  • ½ tsp ground ginger *optional
  • 1 tsp black pepper freshly ground
  • 4 lemon slices

Garlic Mixture

  • 4 + Tbsp olive oil
  • 4 cloves garlic pressed or minced

Instructions

  1. Either in the baking pan or in a ziplock bag combine potatoes ¾ teaspoons salt, ½ teaspoon freshly ground black pepper, and 3 tablespoons of the garlic/oil mixture. Toss together until thoroughly coated. Place on a parchment paper or foil-lined baking pan and space evenly placing the potatoes cut side down. Place in a preheated oven at 450°F.

  2. Bake for about 20 minutes and flip the potatoes cut side up. Bake for another 10 minutes or until the potatoes are soft and almost but not quite done. Move all potatoes to one corner of the baking pan, making space for the salmon and asparagus.
  3. Add the salmon to the baking pan, spacing it about 1 inch apart. Sprinkle with salt (about 1 tsp). Brush the top of the salmon with the oil/garlic mixture. Generously sprinkle with ground mustard (2 teaspoons), followed by a light sprinkle of paprika (1 teaspoon) and a very light sprinkle of ground ginger (1/2 teaspoon). Place a lemon slice on top of each piece.

  4. Now either on the spare side of the baking sheet or in a different bowl, toss the asparagus with 1 teaspoon salt, ½ teaspoon black ground pepper and the remainder of the garlic/oil mixture (about 1 tablespoon). If there isn’t enough of the garlic/oil mixture, give a light drizzle of regular olive oil.

  5. Place the baking sheet with potatoes, salmon & asparagus back in the 450°F oven for another 12-15 minutes depending on the thickness of your salmon, or until the salmon is cooked all the way through. The potatoes should be soft and cooked through, so should the salmon. The asparagus will be cooked with still a slight crispiness on the inside.

  6. Remove from the oven and serve as is on the baking sheet or transfer to a serving platter and serve hot.

    YUM! I loved all of the seasonings! I’m sorry but salt and pepper isn’t enough for me, like a lot of recipes call for. The ginger/paprika/mustard combo on the salmon! Hell yes. This took me an hour and 10 minutes to make, so maybe I’d make this on a weekend instead. My husband loved the potatoes, just so good and nutritious. Nutritious does NOT mean bland and this recipe proves it.

    This is a wonderful dish but I found the 450 degrees and the time too much in my oven for the salmon. Mine was slightly overdone. I haven’t prepared it with a modified time/temp but hope to soon. Thanks for the recipe

    • Hi Carol,
      Because salmon varies in thickness it is hard to guess how much time will be needed for others, so you do have to kind of adjust it to the thickness of your own piece. So you are right that some pieces will need some adjustment.

    I made this tonight with the first asparagus from my garden and it was fabulous! The salmon was very moist and delicious. I was a little nervous about the mustard powder and only sprinkled it lightly. I will use the full amount the next time ~ and I will definitely make it again! Loved the hint of ginger!
    The timing was perfect too!

I also added Italian dried herbs (1 tsp) and a little more garlic, substituted asparagus with broccoli and carrots (that’s just what I had). Oh, my it was so delicious!       With this recipe any vegetables like, asparagus, broccoli, broccolettes, bell pepper, zuccini, squash and onions can be added in varying amounts to make it work.

    Excited to try this.. we eat a lot of salmon in our house. Is the cooking time not too much for the potatoes? I usually cook mine for no more than 25-30 minutes on 450° and they’re like fall apart.. Maybe your pieces are bigger..
