Good use for Extra Cottage Cheese

I’m so excited to share this Cottage Cheese Pancake recipe because it is absolutely delicious, simple and quick to make! We like to eat cottage cheese as is, with a tablespoon of honey or jam, but I am so used to getting a tub of cottage cheese every time I shop, that I got an extra one without realizing that I did so.

That meant just one thing, we were having Cottage Cheese Pancakes! Any excuse is good enough for me to have pancakes 😉 I get the large 36 oz tub since it goes fast in our house, so to keep things fresh I decided to use the surplus to a delicious use and make some Cottage Cheese Pancakes.

Cottage Cheese Recipe you’ll use again and again!

Because of the amount of cottage cheese in this recipe, the cottage cheese melts as it is heated which creates soft, gooey consistency. As soon as it cools, the texture firms up a bit and you get a cross between a regular fluffy pancake and a Swedish crepe.

There was literally no way to make them look not good! Tell me this forkful doesn’t beg to be just inhaled!

Substitute for Cottage Cheese

Next time you’re looking for a nice twist to a regular pancake, grab a tub of cottage cheese and get flipping! If you have no cottage cheese but still would like to make these pancakes, use ricotta cheese instead. The texture will be a little different, but it will still work.

Valentine’s Day is just around the corner, you know, I thought I’d just remind you that this might not be a bad breakfast to wake up to, eh?

Cottage Cheese Pancake Recipe

Ingredients for Cottage Cheese Pancakes:

  • cottage cheese
  • buttermilk
  • eggs
  • baking soda
  • sugar
  • flour
  • vanilla extract

How to make Cottage Cheese Pancakes:

  • Whisk together 4 eggs, 3/4 cup sugar, 16 oz cottage cheese, 1 cup buttermilk,1.5 tsp of baking soda and 1 tsp of vanilla extract until homogenous. Now add 2 cups flour and whisk until combined.
  • Heat a nonstick medium-sized skillet with a little oil over medium-low heat until hot. Add a heaping spoon of batter (or 1/3 cup)  to the skillet and spread around until about 1/4 inch thick. Cover with a lid and cook until the bottom is golden in color and the top is almost all set with no runny batter, about 2-3 minutes. Carefully flip the pancake and cook on the other side until it is golden. Repeat with the remaining batter.
  • Serve with syrup, honey, sour cream mixed with sugar or jam. Enjoy!

Tips for Success:

  • nonstick pan in this recipe is essential, as the pancakes tend to stick quite a bit. If you have a nonstick pan and it still sticks, add a little more oil to the pan.
  • Once you add the flour, do not mix more than needed to bring everything together. Overmixing creates tough pancakes.
  • Covering the pancakes with a lid between flips speeds up the cooking.

    Wow I was skeptical about these pancakes but these just blew me away! I quartered the recipe, added a splash of butter extract and made myself three big pancakes. Wow absolutely delicious and so filling! I was searching for a pancakes that had moderate protein and was “healthy” and these are perfect! The flavor is amazing! They are slightly chewy almost and just so comforting and flavorful! Thanks for posting!

    Is it possible to substitute the buttermilk with something else?

    • You can just replace it with cottage cheese or even milk, but the texture in the first case will be thicker and in the second, thinner. And of course the flavor will be a bit different too.
