Just wash and dry the lettuce in the lettuce spinner, grill the chicken and keep in an airtight container in the fridge until you’re ready to serve, and the veggies can be cut and stored in the fridge as well.

When you’re ready, just pull out all of your prepped ingredients and arrange them nicely on a platter. It should not take more than 5 minutes for that.

After ordering the Thai Chicken Wraps three times in a row in a course of a week at a local popular chain, I knew that if I keep up my habit, our household might go broke from all the eating out. So, off to my kitchen I went.
After tweaking the Peanut Sauce recipe which is what makes this whole Thai Chicken Lettuce Wrap thing come together, I am finally ready to share the recipe and let me just say, it. is. good! Really good!

Also, I never did eat their cold coconut noodles that were usually included on the platter, so I didn’t bother including them in my recipe. Instead, you can replace them with a differently colored shredded carrots, like I did.

Turn the grill to 400F and heat it through while preparing the sauce and chicken.

Combine all ingredients for the sauce except the water.  Whisk until smooth. Use the water to thin the sauce to desired consistency.

These look so good! I love thai wraps, looking forward to make them a lot during sumertime. I was wondering, would it be fine if I put just cooked hot/ warm chicken or does it taste better cold?
