How to make-ahead the Lettuce Wrap Recipe

Just wash and dry the lettuce, carrots and cucumbers. Cut the cucumbers and carrots into strips. Store vegetables in an airtight container. Prepare and grill the chicken breast with the Thai Peanut Sauce Marinade. Allow the chicken to cool, then store in the fridge.
You can assemble the platter right away, cover with plastic wrap and refrigerate until ready to use, OR assemble the platter right before serving.

The flavors of the ginger, garlic, sweet chili sauce, and the peanut butter are so well-balanced in the Peanut Sauce, that you’ll be tempted to break out into a song. At least I did!

After ordering the Thai Chicken Wraps three times in a row in a course of a week at a local popular chain, I knew that if I keep up my habit, our household might go broke from all the eating out. So, off to my kitchen, I went.
After tweaking the Thai Peanut Sauce recipe which is what makes this whole Thai Lettuce Wrap thing come together, I am finally ready to share the recipe and let me just say it. is. good! Really good!

Substitute for Coconut Noodles:

I never did eat Cheesecake Factory’s cold coconut noodles that were usually included on the platter, so I didn’t bother including them in my recipe. Instead, you can replace them with differently colored shredded carrots, like I did. Or use some cooked rice noodles, quinoa, or even brown rice.

The Peanut Sauce recipe you might want to pin and remember it. It’s not only the wraps that it’s good with. You can make it as a dressing to an Asian inspired salad, or a pasta salad with some freshly shredded veggies. Or just grab a spoon and eat it! The choice is yours!

How to make Thai Chicken Lettuce Wraps with Peanut Sauce

  1. Gather all of your ingredients, wash and chop the vegetables.
  2. Mix the ingredients for the Thai Peanut Sauce and thin it with water if needed.
  3. Use part of the sauce to marinate the chicken breast strips. The Peanut Sauce is amazing on its own raw, but also makes a very easy chicken marinade, delicious too! Just don’t use too much of it if you’re grilling the meat, otherwise, it sticks to the grill and makes a mess.
  4. Grill the Chicken Breast by preheating the grill to 400F and cooking it for a couple of minutes on each side.
  5. Lastly, assemble the platter by arranging the vegetables, chicken and the sauce on it.

  1. Gather all of your ingredients, wash the vegetables, shred and cut the carrots, cucumber and chicken.

How to Make the Thai Peanut Sauce:

  1. Combine all ingredients for the sauce except the water. Whisk until smooth. Use the water to thin the sauce to desired consistency.

How to Grill the Chicken for the Thai Lettuce Wraps

  1. Turn the grill to 400°F and heat it through while preparing the sauce and chicken.

  2. Add the chicken breast strips to a bowl and mix together with a ½ cup of the prepared peanut sauce and 2 tsp of kosher salt.

  3. Grill the chicken strips on each side for about 2-3 minutes per side, or until cooked through in the middle. Then, remove to a bowl and cover with foil to keep warm until ready to serve.

How to Assemble the Thai Lettuce Wraps

  1. Arrange all the ingredients on a large platter, then pour the sauce into a dish and place it in the middle. Pour a little bit of the peanut sauce on top of the chicken and sprinkle with the chopped peanuts. The Thai Lettuce Wraps can be pre-wrapped by adding a little bit of each ingredient to a butter lettuce leaf and then wrapping it into a roll, or each guest can create their own wrap.
