With the holidays over, we’re settling in and are excited for the hustle and bustle of the holidays to be over. Not having to run to the store frantically looking for gifts for that one person who has everything is pretty nice.

Another thing I am done with is cooking elaborate dinners with fifty-five steps involved. When it’s time to eat, I want quick, easy, and delicious, and this is where this Easy Margherita Flatbread pizza comes in.

What to make with Naan bread?

My parents were visiting the other day, and my mom brought me a bag of naan bread. It’s delicious to eat, just toasted, but the next day, come lunchtime, I decided to use it as the base for a flatbread pizza. When time (or willingness) allows it, I like to make my crust, but having a pre-made crust that can be loaded with pretty much anything is fantastic if you ask me.

The whole process from start to finish doesn’t take more than 15 minutes, and tell me that having l

unch like this ready in 15 minutes is not awesome!

This idea of using fresh Mozzarella, tomatoes & basil is totally inspired by this recipe from NatashasKitchen.com. After eating those canapés at my girlfriends’ get-together I might or might not have made them 5 times. The first time I tried them, I felt the canapés would benefit from a good kick of garlic, so I have made them with garlic each time since then.

What is Margherita Pizza? 

As I later found out, a pizza made with mozzarella, tomatoes, basil & garlic is called Margherita, although a combination of tomato, mozzarella & basil is called Caprese.

So here’s the easiest flatbread pizza you will ever make. You don’t even have to grate your cheese; how easy is that?

Ingredients for Margherita Flatbread Pizza:

  • Use good quality Naan or homemade pita bread for this flatbread pizza. It is the base for the whole thing, so the better the quality of the flatbread, the better the overall pizza will be.
  • Fresh mozzarella is the thing to use. I use the one Costco sells as it doesn’t seep too much moisture out when heated in the oven.
  • Do not substitute the fresh garlic and basil for dried.

How to make Margherita Flatbread Pizza

1. Press fresh garlic and mix with oil.

2. Brush the flatbread with oil & garlic with half the mixture. Place in preheated to 350F oven for 5-8  minutes or until very crispy.

3. Remove from oven and place three slices of cheese on top of the flatbread, sprinkle with salt & pepper, then place thinly sliced tomatoes on top and repeat with a sprinkling of salt & pepper. Place it back in the oven for another 5 minutes, plus an extra 2-3 minutes on broil. Watch the bread closely; remove it from the oven immediately if it’s too dark before 2-3 minutes.

4. Meanwhile, mix the remaining oil & garlic with the balsamic vinegar, stirring until smooth emulsion forms.

5. Chop the basil leaves.

6. Once the flatbread pizza is baked and the edges are golden, remove it from the oven, drizzle with however much of the balsamic vinegar mixture you would like, sprinkle with basil leaves, slice, serve, and enjoy!

Ingredients

  • 1 naan bread
  • 3 pieces fresh mozzarella cheese sliced to ⅓- 1/2 inch thickness
  • 1 tomato sliced as thin as possible
  • 5-6 leaves basil
  • 3 cloves garlic pressed; or 1 tsp dry garlic powder
  • 1.5 Tbsp Olive oil
  • 1.5 Tbsp Balsamic Vinegar
  • Salt & Pepper to taste

Instructions

  1. Press 3 fresh garlic cloves and mix with 1.5tbsp oil.

  2. Brush the flatbread with oil & garlic with half the mixture. Place in preheated to 350°F oven for 5 minutes to crisp up.

  3. Remove from oven and place 3 slices of cheese on top of the flatbread, sprinkle with salt & pepper, then place thinly sliced tomatoes on top and repeat with a sprinkling of salt & pepper. Place back in the oven for another 5 minutes, plus extra 2-3 minutes on broil. Watch the bread closely, if its too dark before 2-3 minutes remove it from the oven immediately.

    I plan to try this, thanks. It looks easy and good! But do know when you say “Do not substitute the fresh garlic and basil for dried” you are telling people to use dried garlic and basil. Maybe you mean Do not substitute the fresh garlic and basil with dried.

    I followed your directions on baking times but the naan in the center was soggy when serving it. Probably from the juices from the tomatoes and the balsamic mix. Any suggestions?

    This was sooo good. But how do you do the emulsion with balsamic, garlic and oil? It doesn’t mix.

      If you add all ingredients but the oil and whisk them, then while continuing to whisk fast drizzle in the oil in a slow stream it should come together into an emulsion. Whether it emulsifies or not though does not effect the flavor, so if it doesn’t work it’s not too big of a deal 🙂

  • Authentic Pizza Margherita does NOT have garlic. Nor is it drizzled with balsamic vinegar. I’m sure your creation is great, but it shouldn’t be called Margherita.

    • Love, love….shared and will make again often! I used flax flatbread (that is what I had) and let it get good and crispy before I added the toppings. After the toppings were added I left it in long enough to crisp it up even more. What a treat!! Love the balsamic topping, too. Next time I’ll try it with naan.

    Thanks Marina! Your recipe was my inspiration to making flatbread Margherita! I used a President Choice whole wheat flatbread. (From Canada) let it crisp with olive oil and garlic up as you directed. Added mini bocconcinis (halved), home grown cherry tomatoes, (halved) fresh basil, salt and pep , WOW! FRESH! OMG so, so good! I skipped the balsamic as I am tired of the balsamic glaze touching everything we eat these days!

    My husband requests this weekly! Thanks for the yummy recipe. I usually pat the tomatoes and mozzarella dry before sticking them on the naan bread because if not it typically makes the bread soggy and leaves little pools of liquid.. but maybe thats just me 😉 tastes delicious though.

    • Try mixing just the oil and garlic, without the vinegar, and crisp it up in the oven. Then add the vinegar last when you take it out of the oven with the tomatoes and the cheese. Hope this helps!

  • When I was buying the naan, n, I swung by the by the salad bar and grabbed some grilled chicken. It isn’t even that expensive as compared to when you top it on your salad. Four bucks got me plenty of chicken to put on top.

      P.S. You might want to replace the fresh garlic with powdered garlic (about 1/2 – 1 tsp) if you guys are going to go out after eating this lovely flatbread 😀 .

    OMG – we LOVE this pizza. We took it as an appetizer to a recent Wine Tasting & it was big hit. We have made it several times since then and will be making it again tomorrow for lunch. It is so flavorful and the presentation is WONDERFUL!!! This has become a favorite “go to” recipe very quickly!!! We used multi-grain flatbread and it was GREAT!!! I have a pic that I would love to post but I don’t see a place to do that…..LOVE this recipe

    • Try it with no chicken first. This combination is really perfect and doesn’t need anything else. I never thought it would be as good as it was when I tried it. I shared it with my sisters family and her husband made a personal call to me to tell me how much he didn’t expect to, but loved it!

        • They’re not similar in texture or flavor, so if you did it wouldn’t taste like it was intended to. So I guess you can put anything you want on it, but it wouldn’t taste the same.
